Easy Healthy Broccoli Beef



This is a dinner that I put together for my boyfriend who is on a diet. I was to create something with meat and vegetables and this is what I came up with.
  • Beef
  • Broccoli
  • Onion
  • Mushroom
  • Spinach
I simply took the broccoli and put it into a bowl with a couple tablespoons of water and microwaved it for 2 minutes (this was almost to long). The beef had bee grilled for another meal so I just sliced it up and added some spray butter and seasoning of your choice. The spinach comes in a bag and I microwave it for 1-1/2 minutes with a small slit in the bag and that is all it takes. The mushrooms were raw and sliced. Now the onion was from some cabbage that I had steamed so I just cut some thick slivers and used them.

Assembly:

Get a plate, lay down the spinach next the broccoli. sprinkle on the mushrooms, add the beef and lastly layer on the onions.

This is it, I wrapped the plate in plastic and when he got home I microwaved it for a couple minutes till hot and served. It was delicious and met his diet needs for low fat, sodium and more. Simply done can taste great!
